Very Fruity Haskap Muffins

Ingredients:

2 eggs
1 cup sugar
1 cup sour cream
½ cup oil
1 tsp vanilla
1 Tsp baking powder
½ Tsp baking soda
Pinch salt
2 cups flour
1.5 – 2 cups frozen haskap
Lemon sugar

Instructions:

Mix sugar, eggs, sour cream, oil and vanilla together.  Add flour, baking soda, baking powder and salt.  Mix well.  Fold in frozen berries.

Fill muffin cups almost to the top.  Sprinkle some lemon sugar on top

Bake at 450 for 5 minutes then reduce to 375 until the tops are golden brown, approx 25 min.
