
Haskap & Bree Grilled Cheese

This Haskap Grilled Cheese with Brie and Sourdough combines the creamy richness of Brie with the sweet-tart flavor of homemade haskap berry compote. Ingredients:
- 2 slices sourdough bread
- 2–3 oz Brie cheese (sliced or spreadable)
- 1–2 tbsp haskap compote (see below)
- 1 tbsp butter (for grilling)
Haskap Compote:
- 2 cups frozen haskap berries
- 1 cup sugar
- 2 oz lemon juice
- Instructions (Compote):
- In a saucepan over medium heat, combine berries, sugar, and lemon juice. Stir until sugar dissolves and mixture thickens into a compote (10–15 minutes). Let cool.
Instructions (Grilled Cheese):
- Butter one side of each sourdough slice.
- On the unbuttered side of one slice, layer Brie and a spoonful of haskap compote.
- Top with the second slice, buttered side facing out.
- Grill in a skillet over medium heat until golden and melty, 2–3 minutes per side.
- Slice and serve warm—oozy, sweet, and savory perfection.
