Fresh mint and zesty lime blend perfectly with the sweet-tart punch of haskap berries, creating a colorful drink that’s as bold as it is beautiful. Ingredients:

  • 8–10 fresh mint leaves
  • 1/2 lime, cut into wedges
  • 2 oz Haskap Syrup (see below)
  • 1 oz White Rum (optional)
  • Club Soda or Sprite (to top)
  • Extra mint + haskap berries or lime wedge for garnish
Haskap Syrup:
  • 1 cup frozen haskap berries (125g)
  • 1 cup sugar
  • 2 oz lemon juice
  • 1 cup of water
  • Instructions (Syrup):
  • In a saucepan over medium heat, combine the berries, sugar, and lemon juice. Mash the berries with a spoon or blend with a hand blender until smooth. Cook, stirring occasionally, until the sugar dissolves and the mixture thickens into a compote, about 15–20 minutes. Strain through a fine mesh sieve. Let cool completely. Yields approximately 400 ml of syrup.

Instructions (Mojito):

  • In a sturdy glass, muddle the mint leaves and lime wedges to release the juices and oils.
  • Add the haskap syrup and rum, then stir to combine.
  • Fill the glass with ice and top with club soda.
  • Stir gently and garnish with fresh mint, a lime wedge, or a few whole haskap berries.
