Ingredients:

  • 2 slices sourdough bread
  • 2–3 oz Brie cheese (sliced or spreadable)
  • 1–2 tbsp haskap compote (see below)
  • 1 tbsp butter (for grilling)
Haskap Compote:
  • 2 cups frozen haskap berries
  • 1 cup sugar
  • 2 oz lemon juice
  • Instructions (Compote):
  • In a saucepan over medium heat, combine berries, sugar, and lemon juice. Stir until sugar dissolves and mixture thickens into a compote (10–15 minutes). Let cool.

Instructions (Grilled Cheese):

  • Butter one side of each sourdough slice.
  • On the unbuttered side of one slice, layer Brie and a spoonful of haskap compote.
  • Top with the second slice, buttered side facing out.
  • Grill in a skillet over medium heat until golden and melty, 2–3 minutes per side.
