
Haskap Mojito
Cool, crisp, and bursting with vibrant berry flavor, this Haskap Mojito is a refreshing twist on the classic cocktail. Fresh mint and zesty lime blend perfectly with the sweet-tart punch of haskap berries, creating a colorful drink that’s as bold as it is beautiful. Whether you’re hosting a summer gathering or just unwinding on the patio, this antioxidant-rich mojito is sure to impress.
Ingredients:
- 8–10 fresh mint leaves
- 1/2 lime, cut into wedges
- 2 oz Haskap Syrup (see below)
- 1 oz White Rum (optional)
- Club Soda or Sprite (to top)
- Extra mint + haskap berries or lime wedge for garnish
Haskap Syrup:
- 1 cup frozen haskap berries (125g)
- 1 cup sugar
- 2 oz lemon juice
- 1 cup of water
- Instructions (Syrup):
- In a saucepan over medium heat, combine the berries, sugar, and lemon juice. Mash the berries with a spoon or blend with a hand blender until smooth. Cook, stirring occasionally, until the sugar dissolves and the mixture thickens into a compote, about 15–20 minutes. Strain through a fine mesh sieve. Let cool completely. Yields approximately 400 ml of syrup.
Instructions (Mojito):
- In a sturdy glass, muddle the mint leaves and lime wedges to release the juices and oils.
- Add the haskap syrup and rum, then stir to combine.
- Fill the glass with ice and top with club soda.
- Stir gently and garnish with fresh mint, a lime wedge, or a few whole haskap berries.
